Ingredients
Scale
Vegetables
- 1 lb asparagus, trimmed
- 2 cups cherry tomatoes, halved
Other Ingredients
- 2 tbsp olive oil, divided
- Kosher salt, to taste
- Black pepper, to taste
- 2 cups shredded mozzarella cheese
- Fresh chopped basil, for garnish
- Bottled balsamic glaze, for garnish
Instructions
- Preheat the oven: Set the oven to 400°F (200°C). Line a baking sheet with foil and lightly spray it with non-stick cooking spray to prevent sticking.
- Arrange vegetables: Place the trimmed asparagus in a row on one side of the baking sheet, and the halved cherry tomatoes on the other side, keeping them separate for even cooking.
- Season and oil: Drizzle 1 tablespoon of olive oil over the asparagus and season with kosher salt and black pepper. Repeat this step for the cherry tomatoes with the remaining olive oil and seasoning.
- Roast vegetables: Place the baking sheet into the preheated oven and roast the asparagus and tomatoes for 10 minutes, allowing them to soften and begin to caramelize.
- Add cheese and finish roasting: After 10 minutes, remove the baking sheet and sprinkle the shredded mozzarella cheese evenly over the asparagus. Return the sheet to the oven and roast for an additional 5 minutes until the cheese melts and turns golden brown.
- Serve and garnish: Transfer the roasted asparagus to a serving plate, top with the roasted cherry tomatoes, garnish with fresh chopped basil, and drizzle with balsamic glaze for added sweetness and tang.
Notes
- Trim the asparagus by snapping off the woody ends before cooking.
- Use freshly shredded mozzarella for better melting and flavor.
- Balsamic glaze can be substituted with a balsamic reduction if preferred.
- For extra flavor, add a sprinkle of red pepper flakes before roasting.
- Serve immediately for the best texture and taste.
