Description

This Caprese Roasted Asparagus recipe combines tender roasted asparagus and sweet cherry tomatoes topped with melted mozzarella cheese, fresh basil, and a drizzle of balsamic glaze. It’s a quick, flavorful side dish perfect for any meal, highlighting the classic Caprese flavors in a roasted vegetable format.

Ingredients

Scale

Vegetables

  • 1 lb asparagus, trimmed
  • 2 cups cherry tomatoes, halved

Other Ingredients

  • 2 tbsp olive oil, divided
  • Kosher salt, to taste
  • Black pepper, to taste
  • 2 cups shredded mozzarella cheese
  • Fresh chopped basil, for garnish
  • Bottled balsamic glaze, for garnish

Instructions

  1. Preheat the oven: Set the oven to 400°F (200°C). Line a baking sheet with foil and lightly spray it with non-stick cooking spray to prevent sticking.
  2. Arrange vegetables: Place the trimmed asparagus in a row on one side of the baking sheet, and the halved cherry tomatoes on the other side, keeping them separate for even cooking.
  3. Season and oil: Drizzle 1 tablespoon of olive oil over the asparagus and season with kosher salt and black pepper. Repeat this step for the cherry tomatoes with the remaining olive oil and seasoning.
  4. Roast vegetables: Place the baking sheet into the preheated oven and roast the asparagus and tomatoes for 10 minutes, allowing them to soften and begin to caramelize.
  5. Add cheese and finish roasting: After 10 minutes, remove the baking sheet and sprinkle the shredded mozzarella cheese evenly over the asparagus. Return the sheet to the oven and roast for an additional 5 minutes until the cheese melts and turns golden brown.
  6. Serve and garnish: Transfer the roasted asparagus to a serving plate, top with the roasted cherry tomatoes, garnish with fresh chopped basil, and drizzle with balsamic glaze for added sweetness and tang.

Notes

  • Trim the asparagus by snapping off the woody ends before cooking.
  • Use freshly shredded mozzarella for better melting and flavor.
  • Balsamic glaze can be substituted with a balsamic reduction if preferred.
  • For extra flavor, add a sprinkle of red pepper flakes before roasting.
  • Serve immediately for the best texture and taste.
