Description

Delightfully savory and flaky Caramelized Onion Tarts combine the sweetness of slowly cooked onions with tangy feta cheese, all nestled in a buttery puff pastry crust. These elegant yet easy-to-make tarts are perfect for appetizers, brunch, or a sophisticated snack.

Ingredients

Scale

Pastry

  • ½ batch rough puff pastry or classic puff pastry (or store-bought)

Filling

  • 3 large onions, sliced thin
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • 1 tablespoon balsamic vinegar
  • 3 ounces crumbled feta (about ¾ cup)
  • 1 small bunch of chives, sliced fine

Egg Wash

  • 1 egg whisked with a teaspoon of water

Instructions

  1. Prepare the Onions: Heat the olive oil in a large skillet over medium-low heat. Add the thinly sliced onions and salt, stirring occasionally. Cook slowly to caramelize the onions, which should take approximately 30-40 minutes, until golden brown and sweet.
  2. Add Balsamic Vinegar: Stir in the balsamic vinegar with the caramelized onions and cook for an additional 2-3 minutes to infuse the flavor, then remove from heat and allow to cool.
  3. Preheat Oven: Preheat the oven to 400°F (200°C) to prepare for baking the tarts.
  4. Prepare the Pastry: Roll out the puff pastry on a lightly floured surface to desired thickness. Cut into desired tart sizes or shapes and place them on a parchment-lined baking sheet.
  5. Assemble the Tarts: Evenly spread the cooled caramelized onions over the pastry bases. Sprinkle the crumbled feta cheese on top, then brush the pastry edges with the egg wash for a beautiful golden finish once baked.
  6. Bake the Tarts: Place the tarts in the preheated oven and bake for 20-25 minutes, or until the pastry is puffed and golden brown.
  7. Garnish and Serve: Remove the tarts from the oven and immediately sprinkle with fresh sliced chives. Allow to cool slightly before serving.

Notes

  • Use a low heat when caramelizing onions to prevent burning and ensure sweetness.
  • Store-bought puff pastry can be used to save time without compromising flavor.
  • The tarts are best enjoyed warm but can be served at room temperature.
  • For a vegetarian option, ensure the feta cheese is made with microbial rennet.
  • These tarts can be made ahead and reheated gently in the oven before serving.
