Ingredients
Scale
Meatloaf
- 1 1/2 pounds ground beef
- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup ketchup
- 2 tablespoons yellow mustard
- 1 tablespoon Worcestershire sauce
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 cup shredded cheddar cheese
- 1/4 cup chopped pickles (optional)
Topping
- 1/4 cup ketchup
- 2 tablespoons brown sugar
- 6 slices cheddar cheese
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C) and lightly grease a loaf pan or baking dish to prevent sticking.
- Combine Ingredients: In a large bowl, mix together the ground beef, breadcrumbs, eggs, whole milk, 1/4 cup ketchup, yellow mustard, Worcestershire sauce, diced onion, minced garlic, salt, black pepper, and smoked paprika. Stir the mixture until just combined to avoid a dense texture.
- Add Cheese and Pickles: Gently fold in the shredded cheddar cheese and chopped pickles, if using, to evenly distribute the ingredients without overmixing.
- Shape and Place in Pan: Transfer the meat mixture into the prepared loaf pan and shape it into a neat loaf form to ensure even cooking.
- Prepare Topping and Bake: In a small bowl, combine the remaining 1/4 cup ketchup with brown sugar and spread it evenly over the top of the meatloaf. Place the loaf in the oven and bake for 45 minutes.
- Add Cheese Slices and Continue Baking: Remove the meatloaf from the oven and layer the 6 slices of cheddar cheese over the top. Return the pan to the oven and bake for an additional 10 to 15 minutes, or until the meatloaf is fully cooked and the cheese has melted.
- Rest and Serve: Let the meatloaf rest for 10 minutes outside the oven to allow juices to settle before slicing. Serve warm for the best flavor experience.
Notes
- For extra flavor and moisture, try mixing ground beef with ground pork in equal parts.
- American cheese can be used as a substitute for cheddar to achieve a more traditional cheeseburger taste.
- Serve this meatloaf with creamy mashed potatoes or a fresh simple side salad for a complete meal.
