Ingredients
Scale
Potato Puff Mixture
- 3 eggs, beaten
- 2 cups mashed potatoes, at room temperature
- ¾ cup shredded Monterey Jack cheese
- ¼ cup finely chopped fresh chives
- Salt and pepper, to taste
Topping and Garnish
- ¼ cup shredded Monterey Jack cheese
- Additional chopped fresh chives, for garnish
- Sour cream, for serving (optional)
Instructions
- Preheat the oven. Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it to prevent sticking.
- Prepare the potato puff mixture. In a large mixing bowl, combine the mashed potatoes, beaten eggs, ¾ cup shredded Monterey Jack cheese, finely chopped fresh chives, and season with salt and pepper. Mix thoroughly until the mixture is smooth and uniform.
- Form the puffs. Using a spoon or a small ice cream scoop, shape the mixture into 12 equal-sized puffs. Arrange them evenly on the prepared baking sheet to ensure even cooking.
- Add cheese topping. Sprinkle the remaining ¼ cup of shredded Monterey Jack cheese evenly over the tops of each puff for an extra cheesy crust.
- Bake until golden and crispy. Place the baking sheet in the oven and bake for 20 to 25 minutes, or until the puffs are golden brown and have a crispy exterior.
- Cool and garnish. Remove the puffs from the oven and let them cool slightly to firm up. Garnish with additional chopped chives for a fresh finish.
- Serve. Serve the cheesy mashed potato puffs warm, with sour cream on the side if desired, for dipping or topping.
Notes
- Make sure the mashed potatoes are at room temperature to help the mixture bind well with the eggs and cheese.
- Use freshly shredded cheese to ensure it melts perfectly and adds maximum flavor.
- For a crispier texture, you can lightly brush the puffs with melted butter before baking.
- These puffs can be prepared ahead of time and baked just before serving.
- Substitute chives with green onions or parsley if preferred.
