Instructions
- Heat the oil: Heat 2 tablespoons of olive oil in a pan over medium heat until shimmering.
- Sauté vegetables: Add the diced onions and bell peppers to the pan and sauté until they are soft and tender, about 3-5 minutes.
- Add chicken and seasoning: Stir in the shredded chicken and sprinkle with 1 teaspoon of taco seasoning. Mix well to combine and heat through for 2-3 minutes.
- Assemble quesadilla: Place a flour tortilla in the pan. On one half of the tortilla, spread a portion of the chicken mixture and sprinkle with shredded cheese.

- Repeat assembly: Repeat the assembling and cooking process with the remaining tortillas and filling.
