Ingredients
Scale
Vegetables & Aromatics
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 cups fresh spinach, chopped
Dry Goods & Canned Ingredients
- 1 can chickpeas, drained and rinsed (about 15 oz)
- 1 can coconut milk (about 14 oz)
- 1 tablespoon curry powder
Oils & Seasonings
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil: Warm 1 tablespoon of olive oil in a pan over medium heat to create the perfect base for sautéing the aromatics.
- Sauté aromatics: Add chopped onion, minced garlic, and grated ginger to the pan. Cook them until the onion becomes translucent and fragrant, about 3-5 minutes, stirring occasionally.
- Add curry powder: Stir in 1 tablespoon of curry powder and cook for 1 minute to release the spices’ flavors.
- Combine chickpeas and coconut milk: Add the drained and rinsed chickpeas and the can of coconut milk into the pan. Stir thoroughly to mix all ingredients evenly.
- Simmer the curry: Let the mixture simmer gently for 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Add spinach: Incorporate the chopped fresh spinach into the curry and cook until wilted, about 2-3 minutes.
- Season: Season the curry with salt and black pepper to taste, adjusting as needed for perfect flavor balance.
- Serve: Serve the warm chickpea and spinach curry immediately, ideally with steamed rice or your choice of bread.
Notes

- Add a pinch of chili flakes if you prefer a spicier curry.
- For added protein, consider adding tofu or paneer cubes.
- Leftovers reheat well in a microwave or stovetop pan.
- Serve with naan or basmati rice for a complete meal.
