Dry Ingredients
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup brown sugar
- 1 tablespoon ground cinnamon
Wet Ingredients
- 3/4 cup milk
- 1/3 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, softened (for filling)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease it well to prevent sticking.
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt to evenly combine the leavening agents and seasonings.
- Combine Wet Ingredients: In a separate bowl, mix the milk, melted unsalted butter, egg, and vanilla extract until fully blended.
- Make Batter: Pour the wet ingredients into the dry ingredients and stir gently just until combined; avoid overmixing to maintain tenderness in the muffins.
- Prepare Cinnamon Filling: In a small bowl, combine the brown sugar and ground cinnamon to create the cinnamon sugar filling.
- Assemble Muffins: Fill each muffin cup halfway with batter. Add a small spoonful of softened unsalted butter and a sprinkle of the cinnamon sugar mixture on top of the batter. Then, add more batter until the muffin cups are about three-quarters full.
- Swirl Filling: Use a toothpick or knife to gently swirl the cinnamon sugar mixture into the batter to create a cinnamon roll effect.
- Bake: Place the muffin tin in the oven and bake for 18 to 22 minutes until the muffins are golden and a toothpick inserted into the center comes out clean.
- Prepare Glaze: While the muffins cool slightly, whisk together powdered sugar, milk, and vanilla extract to make a smooth glaze.
- Glaze and Serve: Drizzle the glaze over the warm muffins and serve immediately for best taste.
Notes
- Do not overmix the batter to keep the muffins soft and tender.
- For extra cinnamon flavor, add a pinch of nutmeg to the cinnamon sugar filling.
- These muffins are best enjoyed warm, freshly baked.
