Description

Classic Butter Swim Biscuits are tender, fluffy biscuits baked directly on melted butter in a hot oven. This method creates a rich, buttery crust with soft, flaky interiors. Perfect for breakfast or as a comforting side, these biscuits combine simple ingredients to yield a delicious, golden-brown treat.

Ingredients

Scale

Dry Ingredients

  • 2½ cups (312 g) all-purpose flour, unbleached
  • 4 tsp baking powder, fresh
  • 1 tbsp (12 g) granulated sugar
  • 2 tsp kosher salt

Wet Ingredients

  • 1 ¾ cups (414 ml) buttermilk, room temperature, low-fat or whole
  • ½ cup (113 g) unsalted butter, cut into 1-inch cubes

Instructions

  1. Preheat the oven and prepare butter: Set your oven to 450°F (232°C) and let it heat up fully. Place the cubed unsalted butter into a square glass baking dish and put it in the oven to melt until the butter is bubbling but not browned. Watch closely to avoid burning.
  2. Mix dry ingredients: In a medium bowl, whisk together all-purpose flour, baking powder, granulated sugar, and kosher salt until everything is fully combined and evenly distributed.
  3. Add buttermilk: Gradually pour the room-temperature buttermilk into the dry ingredients. Stir gently with a spatula or spoon until just combined. It’s okay if the batter is a bit lumpy, as overmixing can toughen the biscuits.
  4. Assemble dough over butter: Carefully remove the baking dish from the oven with the melted butter. Pour the biscuit dough over the butter, taking care not to disturb the butter too much. Use a spatula to spread the dough evenly across the dish. Don’t worry about a perfectly neat layer as the dough will settle.
  5. Bake the biscuits: Place the baking dish back into the oven and bake for 23 minutes. The biscuits are ready when the top is golden brown and edges start to crisp. Rotate the dish halfway through baking for even browning. If edges brown too quickly, tent with foil after 15 minutes. Let biscuits cool for at least 2 minutes before serving.

Notes

  • Use fresh baking powder for best rise and texture.
  • Do not overmix the batter to keep biscuits light and fluffy.
  • Keep an eye on the butter melting to prevent burning.
  • Rotate baking dish halfway through cooking to ensure even browning.
  • Tent with foil if edges brown too fast.
