Ingredients
Scale
Veggies
- 1 cup fresh corn (shucked)
- 1 cup zucchini (grated, excess moisture removed)
- ¼ cup green onions (chopped)
Dry Ingredients
- ½ cup all-purpose flour
- 1 tsp baking powder
Wet Ingredients
- 2 large eggs (beaten)
Seasoning
- ½ tsp salt
- ¼ tsp black pepper
For Frying
- 2 tbsp olive oil or vegetable oil
Instructions
- Prepare Vegetables: Shuck the fresh corn to remove kernels and grate the zucchini. Use cheesecloth or paper towels to squeeze out any excess moisture from the grated zucchini to avoid soggy fritters.
- Mix Batter: In a large bowl, combine the corn kernels, grated zucchini, and chopped green onions. Add the all-purpose flour, baking powder, and beaten eggs. Mix all ingredients thoroughly until you get a well-combined batter.
- Season: Add salt and black pepper to the batter and stir to evenly distribute the seasonings.
- Heat Oil: Place a non-stick skillet over medium heat and add olive oil or vegetable oil. Heat the oil until it is shimmering and hot but not smoking.
- Fry Fritters: Drop spoonfuls of the batter carefully into the hot oil. Fry each fritter for about 3 to 4 minutes per side, or until golden brown and cooked through. Work in batches if the skillet isn’t large enough to avoid overcrowding.
- Drain Excess Oil: Once fried, transfer the fritters onto paper towels to drain off any excess oil.
- Serve: Serve the fritters warm as a snack or side dish, individually or with your favorite dipping sauce.
Notes
- Make sure to squeeze out as much moisture as possible from the zucchini to prevent the batter from becoming too wet.
- You can substitute all-purpose flour with gluten-free flour for a gluten-free option.
- These fritters can be kept warm in an oven set to low heat while finishing the rest of the batch.
- For a dairy-free version, ensure the frying oil is plant-based and avoid adding any dairy condiments when serving.
- Leftover fritters can be refrigerated for up to 2 days and reheated in a skillet or oven for best texture.
