  • 1 cup corn (canned or fresh)
  • 1 can (14.5 oz) diced tomatoes

  • 6 cups beef broth or bone broth
  • 2 tablespoons olive oil

Spices & Seasonings

  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon Italian seasoning
  • Salt to taste


Instructions

  1. Sauté Mirepoix: In a large pot, heat olive oil over medium heat. Add diced onion, celery, and carrots (mirepoix). Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. Brown Ground Beef: Add ground beef to the pot with the softened mirepoix. Cook, breaking the meat into small pieces with a spoon, until the beef is fully browned and no pink remains, approximately 6-8 minutes. Drain excess fat if desired.
  3. Add Vegetables and Broth: Stir in diced potatoes, diced tomatoes with their juice, corn, and black-eyed peas or beans. Pour in the beef broth and mix well to combine all ingredients evenly.
  4. Season the Soup: Add smoked paprika, chili powder, Italian seasoning, and salt. Stir well to distribute the spices throughout the soup.
  5. Simmer: Bring the mixture to a boil over high heat. Once boiling, reduce the heat to low and cover the pot. Let the soup simmer gently for 15 minutes, or until the potatoes are tender and flavors have melded together.
  6. Adjust Seasoning and Serve: Taste the soup and add additional salt or spices as desired. Serve the cowboy soup hot, garnished if preferred.
