These Cranberry Brie Bites are a perfect festive appetizer combining flaky puff pastry, creamy melted brie, and tangy cranberry sauce, topped with optional crunchy pecans and fresh thyme for a burst of flavor and elegance. Ideal for holiday parties or any special gathering, these bite-sized treats are easy to prepare and sure to impress your guests.

Ingredients

Scale

Dough

  • 1 package (17.3 oz) frozen puff pastry, thawed

Filling

  • 8 oz wheel of brie cheese
  • 1 cup cranberry sauce (homemade or store-bought)
  • 1/4 cup chopped pecans (optional)
  • 2-3 sprigs fresh thyme for garnish
  • 1 egg, beaten (for egg wash, optional)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 375°F (190°C). Grease a mini muffin tin thoroughly to prevent sticking.
  2. Prepare Puff Pastry: Roll out the thawed puff pastry sheet on a clean surface. Using a sharp knife or pizza cutter, cut the pastry into 24 equal squares, sized to fit your mini muffin cups.
  3. Form Pastry Cups: Gently press each pastry square into the muffin tin cups, shaping them to form a little pastry cup that will hold the filling.
  4. Prepare Brie: Slice the brie wheel into 24 small cubes, approximately 1/2 inch each, ensuring consistent bite sizes.
  5. Fill Pastry Cups: Place one cube of brie cheese into each pastry cup, distributing evenly among all cups.
  6. Add Cranberry Sauce: Spoon about one tablespoon of cranberry sauce on top of each brie cube, giving a nice tart contrast to the rich cheese.
  7. Add Pecans (Optional): If desired, sprinkle chopped pecans on top of each bite for added texture and flavor.
  8. Apply Egg Wash (Optional): Brush the edges of the pastry with the beaten egg to achieve a beautiful golden-brown finish during baking.
  9. Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the pastry is puffed and golden brown and the brie is melted and bubbly.
  10. Cool and Garnish: Remove from the oven and let the bites cool in the tin for a few minutes. Garnish each bite with fresh thyme sprigs before serving.

Notes

  • Allow the puff pastry to thaw completely before rolling out to prevent cracking.
  • Brie rind is edible; however, you may remove it if preferred for a milder flavor.
  • If you don’t have a mini muffin tin, you can use a regular muffin tin, but adjust the pastry and filling sizes accordingly.
  • For a vegan version, substitute brie with a plant-based cheese alternative and use a vegan puff pastry.
  • These bites are best served warm but can be refrigerated and gently reheated before serving.
