Instructions
- Combine Ingredients in Crockpot: Add the diced potatoes, finely chopped onion, minced garlic, chicken broth, unsalted butter, salt, black pepper, and dried thyme to the crockpot. Stir well to combine all ingredients evenly.
- Cook Until Tender: Cover the crockpot and cook on low for 6 to 7 hours or high for 3 to 4 hours until the potatoes are tender and easily pierced with a fork.
- Mash Potatoes for Texture: Use a potato masher to lightly mash some of the potatoes in the crockpot to create a creamier texture, while leaving some chunks intact for a rustic feel.
- Prepare Cornstarch Slurry: In a small bowl, whisk together the cornstarch and water until smooth to create a slurry, which will help thicken the soup.
- Add Dairy and Thicken: Stir the cornstarch slurry into the soup along with the heavy cream, whole milk, softened cream cheese, and shredded cheddar cheese. Mix well to combine all the dairy and cheese evenly into the soup.
