Ingredients
Scale
Vegetables
- 1 large head of cauliflower (about 2 pounds), cut into florets
Dairy
- 1/2 cup heavy cream
- 4 tablespoons unsalted butter, divided
Other
- 3 cloves garlic, minced
- Salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- Prepare the Cauliflower: Cut the cauliflower into florets and rinse them thoroughly under cold water to clean and remove any dirt.
- Cook the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for 10-12 minutes until they are tender when pierced with a fork. Drain well.
- Sauté the Garlic: In a small saucepan, melt 2 tablespoons of unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, stirring frequently, until fragrant but not browned.
- Blend the Cauliflower: Transfer the cooked cauliflower to a food processor. Add the heavy cream, sautéed garlic with butter, and the remaining 2 tablespoons of butter. Blend until smooth and creamy.
- Season the Mash: Add salt and freshly cracked black pepper to taste. Blend briefly again to incorporate the seasoning evenly.
- Serve: Transfer the creamy mashed cauliflower to a serving dish. Drizzle with a little melted butter from the sautéing pan and serve warm as a comforting and flavorful side dish.
Notes
- You can adjust the consistency by adding more or less heavy cream depending on your preference.
- For a lighter version, substitute heavy cream with milk or a milk alternative, but the mash may be less creamy.
- Add fresh herbs like chives or parsley for added flavor and color.
- To make it dairy-free, use vegan butter and coconut cream instead of butter and heavy cream.
- Ensure not to overcook the cauliflower to avoid watery mash.
