Crispy Air Fryer Spring Rolls are a delicious and healthier alternative to traditional fried spring rolls. Filled with sautéed shredded cabbage, carrots, mushrooms, and flavored with garlic, soy sauce, and sesame oil, these spring rolls are air-fried to perfection, resulting in a golden, crunchy exterior without the excess oil. Perfect as an appetizer or snack, they pair wonderfully with your favorite dipping sauces.

- 2 cups shredded cabbage
- 1 cup shredded carrots
- 1 cup chopped mushrooms
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 tablespoon vegetable or cooking oil
- Salt and pepper, to taste
- 1 tablespoon chopped cilantro
- 1/4 teaspoon red pepper flakes (optional)
Spring Rolls
- 8-10 spring roll wrappers
- Water for sealing wrappers
- Cooking spray or light oil spray for air fryer basket and spring rolls
Instructions
- Prepare the filling: Heat a skillet over medium heat and add the cooking oil. Sauté the minced garlic until fragrant, about 30 seconds. Add the shredded cabbage, carrots, and mushrooms, cooking for about 5 minutes, stirring occasionally, until the vegetables are tender but still retain some crispness.
- Flavor it: Drizzle the soy sauce and sesame oil over the sautéed vegetables. Stir well to combine and season with salt, pepper, chopped cilantro, and red pepper flakes if using. Remove from heat and let the filling cool slightly.
- Wrap it: Lay a spring roll wrapper flat on a clean surface. Place about two tablespoons of the filling in one corner of the wrapper. Fold the corner over the filling, then fold in both sides tightly like a burrito. Seal the edge with a little water to ensure the spring roll stays closed during cooking.
- Air fry: Preheat the air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking spray. Arrange the spring rolls in a single layer without overcrowding. Lightly spray the tops of the spring rolls with oil as well. Cook for 10-12 minutes, turning halfway through if needed, until they are uniformly golden brown and crispy.
- Serve hot: Carefully remove the spring rolls from the air fryer and serve immediately. Enjoy with your favorite dipping sauce such as sweet chili sauce, soy sauce, or peanut sauce.
Notes
- Do not overfill the spring roll wrappers to prevent tearing during wrapping and cooking.
- For extra crispiness, lightly brush the spring rolls with oil instead of spraying if you prefer.
- You can customize the filling by adding other veggies like bell peppers, bean sprouts, or green onions.
- These spring rolls can be frozen uncooked; freeze on a tray and then store in bags for up to 1 month. Air fry directly from frozen adding an extra few minutes cooking time.
- If you don’t have an air fryer, you can bake them in a preheated oven at 400°F (200°C) for 15-20 minutes, flipping halfway through.
