Instructions
- Prepare the beef mixture: In a large bowl, combine the cooked shredded beef with salsa, ground cumin, chili powder, garlic powder, salt, and black pepper. Mix thoroughly until all the ingredients are well incorporated and the beef is evenly seasoned.
- Warm the tortillas: To make the corn tortillas pliable and easier to roll, warm them either by microwaving for about 20-30 seconds or by heating them briefly on a dry skillet over medium heat.
- Assemble the taquitos: Place a warmed tortilla on a flat surface. Spoon about 2 to 3 tablespoons of the beef mixture onto the center of the tortilla. Sprinkle a small amount of shredded cheese over the beef. Roll the tortilla tightly around the filling and place it seam-side down on a baking sheet if baking, or prepare for frying.
- Bake (optional): Preheat the oven to 425°F (220°C). Arrange the rolled taquitos seam-side down on a baking sheet. Lightly brush the tops of the taquitos with vegetable oil to help them crisp up. Bake for 15 to 20 minutes, or until the taquitos are golden brown and crispy.
