Description

This easy Crock Pot Chicken Tacos recipe features tender, shredded chicken slow-cooked in salsa and taco seasoning for a flavorful and hands-off meal. Chicken and Seasoning

  • 1 ½ to 2 lbs. boneless skinless chicken breasts
  • 1 jar (16 ounces) salsa
  • 1 packet (1 ounce) taco seasoning
  • Juice from 1 lime

  • 1 can (15 ounces) black beans, drained and rinsed (optional)
  • Flour or corn tortillas, warmed, for serving


Instructions

  1. Prepare the chicken: Place the boneless skinless chicken breasts in the bottom of a large greased crock pot. Pour the jar of salsa evenly over the chicken breasts. Sprinkle the taco seasoning over the salsa-covered chicken. Squeeze the juice from one lime over the mixture to add a fresh citrus flavor.
  2. Cook low and slow: Cover the crock pot with its lid and cook on low heat for 3 to 4 hours, allowing the chicken to become tender and infused with the salsa and seasoning flavors.
  3. Shred and add beans: Carefully remove the lid and shred the chicken directly in the crock pot using two forks. Stir in the drained and rinsed black beans if using. Cover again with the lid and continue cooking for 1 additional hour to warm the beans and let the flavors meld.
