Instructions
- Prepare the Chicken: Heat a large non-stick skillet over medium-high heat. Lightly spray with cooking spray. Add the cubed chicken breasts and season with salt and pepper. Cook, stirring frequently, for about 10 minutes or until the chicken is fully cooked through in the center.

- Assemble the Salad: Lay a bed of freshly chopped romaine lettuce on each plate. Spoon the taco-seasoned chicken over the lettuce. Add cooked corn, sliced cherry tomatoes, shredded cheddar cheese, sliced green onion, and freshly chopped cilantro to each salad according to your preference.
