Ingredients
Scale
Fruit Mixture
- 200 grams mixed dried fruits
Cake Batter
- 100 grams unsalted butter
- 150 grams brown sugar
- 2 large eggs
- 200 grams all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
Icing
- 100 grams icing sugar
- 2 tablespoons water
Instructions
- Preheat Oven: Preheat the oven to 180°C (350°F) to prepare for baking the traybake.
- Prepare Fruits: In a bowl, mix the 200 grams of mixed dried fruits with a small amount of flour to prevent them from sinking during baking.
- Melt Butter and Sugar: In a saucepan, gently melt together the unsalted butter and brown sugar over low heat until combined and smooth. Remove from heat.
- Add Eggs: Let the butter and sugar mixture cool slightly before adding the eggs one at a time, mixing well after each addition to create a smooth batter.
- Add Dry Ingredients: Fold in the all-purpose flour, baking powder, and ground cinnamon carefully to maintain the batter’s light texture.
- Incorporate Fruits and Vanilla: Gently mix in the floured dried fruits and add the vanilla extract, ensuring even distribution throughout the batter.
- Prepare Baking Tray: Line a baking tray with parchment paper and pour in the batter, smoothing the top evenly with a spatula.
- Bake: Bake in the preheated oven for 25-30 minutes or until the traybake is golden brown and firm to the touch.
- Cool: Remove the cake from the oven and let it cool completely in the tray before icing.
- Make Icing and Drizzle: Mix the icing sugar with water to create a smooth icing, then drizzle evenly over the cooled cake and allow it to set before slicing and serving.
