Description

A quick and nutritious shrimp and asparagus stir fry that comes together in just 20 minutes. This healthy dish features tender shrimp and crisp asparagus cooked with garlic, soy sauce, and sesame oil for a flavorful, low-calorie meal perfect for busy weeknights.

Ingredients

Scale

Protein

  • 1 lb shrimp, peeled and deveined

Vegetables

  • 1 bunch asparagus, trimmed and cut into pieces

Oils and Sauces

  • 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce

Others

  • 3 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Heat the oil: Warm 2 tablespoons of olive oil in a large pan over medium heat, ensuring the pan is hot enough to sauté the garlic without burning.
  2. Sauté garlic: Add the minced garlic to the pan and cook for about 1 minute until fragrant, being careful not to let it brown.
  3. Cook shrimp: Add the peeled and deveined shrimp to the pan and cook until they turn pink and opaque, approximately 3 to 4 minutes, stirring occasionally for even cooking.
  4. Cook asparagus: Add the trimmed and cut asparagus pieces to the pan and stir fry them together with the shrimp for another 3 to 4 minutes, until the asparagus is tender-crisp.
  5. Add seasonings: Pour in 2 tablespoons of soy sauce and 1 tablespoon of sesame oil, stirring thoroughly to coat the shrimp and asparagus evenly with the flavorful sauce.
  6. Season to taste: Add salt and freshly ground black pepper according to your preference and give the stir fry a final mix.
  7. Serve: Remove from heat and serve the shrimp and asparagus stir fry immediately while hot, perfect with steamed rice or noodles.

Notes

  • For a gluten-free version, use tamari or gluten-free soy sauce.
  • Trim the asparagus by snapping off the woody ends before cutting into pieces.
  • Add chili flakes or fresh ginger to the garlic for extra heat and flavor.
  • Ensure not to overcook shrimp as it can become rubbery.
  • This recipe can be doubled easily for larger gatherings.
