Ingredients
Scale
Crust
- 1 1/2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
Pecan Filling
- 1 cup light corn syrup
- 3/4 cup packed brown sugar
- 1/4 cup unsalted butter, melted
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 3 large eggs
- 2 cups pecan halves or chopped pecans
Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or lightly grease it to prevent sticking.
- Make the Crust: In a medium bowl, combine the flour, granulated sugar, and salt. Add the cold, cubed butter, and cut it into the dry ingredients using a pastry cutter or fingers until the mixture resembles coarse crumbs.
- Press and Bake Crust: Press the crumbly crust mixture evenly into the prepared pan to form a firm, even layer. Bake for 12-15 minutes or until the crust turns lightly golden. Remove from the oven and allow it to cool slightly.
- Prepare Pecan Filling: While the crust cools, whisk together the corn syrup, brown sugar, melted butter, vanilla extract, and salt in a large bowl. Add the eggs one at a time, mixing well after each addition to ensure a smooth filling.
- Add Pecans and Pour Filling: Stir in the pecans evenly into the filling mixture. Pour the pecan filling over the pre-baked crust, spreading it out evenly to cover the surface.
- Bake the Bars: Return the pan to the oven and bake for 25-30 minutes, or until the filling is set and golden brown around the edges. Avoid overbaking to keep the filling gooey.
- Cool and Serve: Let the bars cool completely in the pan on a wire rack. Once cooled, slice into squares and serve.
Notes
- Use cold butter for the crust to achieve a flaky texture.
- Allow the bars to cool fully before slicing to prevent the filling from oozing out.
- Pecans can be halved or chopped depending on your texture preference.
- Store leftovers covered at room temperature for up to 3 days or refrigerate for a week.
- These bars can be served with whipped cream or vanilla ice cream for extra indulgence.
