Ingredients
Scale
Dough Ingredients
- 3 ½ cups (420g) bread flour, sifted and leveled
- 2 tsp instant yeast
- 2 Tbsp sugar
- 1 tsp salt
- 1 â…“ cups (333g) fat-free Greek yogurt, plain or unsweetened
- ½ cup water (or milk of choice)
Filling Ingredients
- 3 Tbsp brown sugar (or granulated monk fruit sweetener)
- 1 Tbsp cinnamon powder
Glaze Ingredients
- 1 cup powdered sugar (or powdered monk fruit sweetener)
- 2 Tbsp milk of choice
Instructions
- Prepare the Dough: In a stand mixer, combine flour, yeast, sugar, and salt. Add the fat-free Greek yogurt and knead on low speed. Gradually pour in water until a dough forms. Knead for 8-10 minutes until the dough is smooth and stretchy.
- Let the Dough Rise: Transfer the dough to a greased bowl, cover it, and let it rise for 60-90 minutes or until it has doubled in size.
- Make the Filling: Mix the brown sugar and cinnamon powder in a small bowl and set aside.
- Shape the Rolls: Punch down the risen dough and roll it out into an 18 x 10-inch rectangle. Lightly brush the surface with water or almond milk, then evenly sprinkle the cinnamon sugar mixture over the dough.
- Roll and Cut: Roll the dough tightly into a log, pinching the seam to seal it. Use string or dental floss to cut the log into 12 equal pieces without squishing the rolls.
- Second Rise: Place the rolls in a 9×12-inch pan lined with parchment paper, leaving about ½ inch space between each one. Cover and let them rise for another 30 minutes.
- Preheat the Oven: Set the oven to 350°F (180°C) to be ready for baking.
- Bake: Bake the cinnamon rolls for 15-20 minutes, or until they turn golden brown on top.
- Make the Glaze: While the rolls bake, whisk together powdered sugar and milk until smooth and pourable. Adjust with more milk or sugar to get the desired consistency.
- Glaze and Serve: Let the rolls cool slightly after baking, then drizzle the glaze evenly over the top before serving.
Notes
- You can substitute the water with your preferred milk like almond or oat milk for added flavor.
- Using powdered monk fruit sweetener is a great sugar-free alternative if you prefer to reduce sugar content.
- Make sure not to over-knead the dough beyond 10 minutes as it could make the rolls tough.
- Allow adequate rising time for fluffy, soft rolls.
- Let the rolls cool a little before glazing to prevent the glaze from melting off completely.
