Instructions

  1. Prepare the Dough: In a stand mixer, combine flour, yeast, sugar, and salt. Add the fat-free Greek yogurt and knead on low speed. Gradually pour in water until a dough forms. Knead for 8-10 minutes until the dough is smooth and stretchy.
  2. Let the Dough Rise: Transfer the dough to a greased bowl, cover it, and let it rise for 60-90 minutes or until it has doubled in size.
  3. Make the Filling: Mix the brown sugar and cinnamon powder in a small bowl and set aside.
  4. Shape the Rolls: Punch down the risen dough and roll it out into an 18 x 10-inch rectangle. Lightly brush the surface with water or almond milk, then evenly sprinkle the cinnamon sugar mixture over the dough.
  5. Roll and Cut: Roll the dough tightly into a log, pinching the seam to seal it. Use string or dental floss to cut the log into 12 equal pieces without squishing the rolls.
  6. Second Rise: Place the rolls in a 9×12-inch pan lined with parchment paper, leaving about ½ inch space between each one. Cover and let them rise for another 30 minutes.
