Description

Fresh Vegetable Tortilla Roll-Ups are a delicious and colorful appetizer perfect for parties or healthy snacking. These easy-to-make roll-ups combine creamy seasoned cheese spread with a crunchy mix of fresh vegetables, all wrapped in soft flour tortillas. Chilled to firm up, they slice into pretty pinwheel pieces that everyone will love.

Ingredients

Scale

Cheese Spread

  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Vegetables

  • 1/2 cup finely chopped red bell pepper
  • 1/2 cup finely chopped cucumber, seeded
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/2 cup fresh spinach leaves, finely chopped

Other

  • 4 large flour tortillas

Instructions

  1. Mix the cheese spread: In a medium bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, dried dill, salt, and black pepper. Stir until the mixture is smooth and well combined.
  2. Prepare the tortillas: Lay each flour tortilla flat on a clean surface. Spread an even layer of the cheese mixture over each tortilla, leaving a small border around the edges to prevent spillage.
  3. Add vegetables: Evenly sprinkle the finely chopped red bell pepper, cucumber, shredded carrots, green onions, and chopped spinach leaves over the cream cheese layer on each tortilla.
  4. Roll up the tortillas: Starting at one edge, tightly roll each tortilla into a log to encase the filling securely.
  5. Chill: Wrap each rolled tortilla tightly in plastic wrap and refrigerate for at least 1 hour to let the roll-ups firm up and flavors meld.
  6. Slice and serve: Remove the plastic wrap and slice each roll into 1-inch pinwheel pieces. Serve chilled as a fresh, colorful appetizer or snack.

Notes

  • For enhanced flavor, try using flavored tortillas such as spinach or sun-dried tomato varieties.
  • Finely chopping the vegetables helps the roll-ups hold together better and ensures a pleasant texture.
  • These roll-ups can be prepared a day ahead and stored tightly wrapped in the refrigerator for convenience.
