Description

This Fried Egg Quesadilla recipe is a quick and flavorful meal perfect for breakfast or brunch. Combining crispy tortillas with melty cheese, runny fried eggs, and creamy avocado slices, it’s a satisfying dish that comes together in just 15 minutes. Enjoy the perfect balance of textures and rich flavors wrapped in a warm, golden quesadilla.

Ingredients

Scale

Quesadilla Ingredients

  • 2 flour tortillas
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tbsp butter (for frying the tortillas)
  • Salt and pepper to taste

Egg and Toppings

  • 2 large eggs
  • 1 avocado, sliced

Instructions

  1. Prepare the Skillet: Heat a non-stick skillet over medium heat and add a small amount of butter, just enough to coat the surface for frying.
  2. Cook the Eggs: Crack one egg into the skillet, season with salt and pepper, and cook until the egg white is fully set but the yolk remains runny. Carefully remove the egg and set aside. Repeat the process for the second egg.
  3. Build the Quesadilla Base: In the same skillet, place one tortilla flat on the surface. Sprinkle half of the shredded cheese evenly over the tortilla.
  4. Add Eggs and Avocado: Place the fried eggs on top of the cheese layer, then arrange the sliced avocado evenly over the eggs.
  5. Complete the Quesadilla: Sprinkle the remaining cheese over the avocado slices and top with the second tortilla.
  6. Cook the Quesadilla: Cook for 2-3 minutes on one side until the tortilla turns golden brown and the cheese begins to melt. Carefully flip the quesadilla and cook the other side for another 2-3 minutes until golden and the cheese is fully melted.
  7. Serve: Remove the quesadilla from the skillet and transfer to a cutting board. Cut into wedges and serve hot immediately.

Notes

  • Use cheese that melts well such as cheddar or mozzarella for the best texture.
  • To keep the yolk runny, avoid flipping the eggs once the whites have set completely.
  • You can add salsa or hot sauce when serving for extra flavor.
  • If you prefer, you can substitute whole wheat tortillas for a healthier option.
  • Adjust salt and pepper seasoning per your taste.
