Instructions
- Prepare the Skillet: Heat a non-stick skillet over medium heat and melt a small amount of butter to ensure the eggs don’t stick and to add flavor.
- Fry the Eggs: Crack one egg into the skillet, season it with salt and pepper, and cook until the egg whites are set but the yolks remain slightly runny. Remove the egg and repeat for the second egg.
- Assemble the Quesadilla: Place one tortilla in the same skillet and sprinkle half of the shredded cheese evenly over it. Add the two fried eggs on top, along with optional sliced avocado if desired. Then sprinkle the rest of the cheese over the eggs and cover with the second tortilla.
- Cook the Quesadilla: Cook the assembled quesadilla for about 2-3 minutes on each side until the tortillas are golden brown and crispy, and the cheese inside has melted.
- Serve & Enjoy: Remove the quesadilla from the skillet, slice it into wedges, and serve warm with salsa, sour cream, and fresh herbs for garnish.
