Potatoes

  • 1 1/2 pounds baby Yukon gold potatoes, halved
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter, melted
  • 2.5 cloves garlic, minced
  • 1 teaspoon paprika
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Garnish

  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice (optional)


Instructions

  1. Preheat oven and prepare baking dish: Preheat your oven to 400°F. Lightly grease a large baking dish or sheet pan to prevent sticking.
  2. Prepare the potatoes: In a large bowl, toss the halved Yukon gold potatoes with 1 tablespoon olive oil, half of the melted butter, half of the minced garlic, paprika, salt, and black pepper until evenly coated. Spread the potatoes on one side of the prepared baking dish.
  3. Prepare the chicken: Using the same bowl, coat the chicken breasts with the remaining olive oil and melted butter, the rest of the minced garlic, Italian seasoning, salt, black pepper, and half of the Parmesan cheese.
  4. Arrange chicken and potatoes: Place the coated chicken breasts on the opposite side of the baking dish from the potatoes, ensuring even spacing for proper cooking.
  5. Bake the dish: Bake for 30 minutes, stirring the potatoes halfway through for even cooking and browning.
