Description

These Gluten Free Vegan Spring Rolls are a fresh, healthy, and delicious appetizer or light meal perfect for any occasion. Made with crisp julienned vegetables, creamy avocado, and fresh cilantro wrapped in delicate rice paper, they offer a delightful blend of textures and flavors. Ready in just 15 minutes, these spring rolls are served with a simple soy sauce and sesame oil dip for an authentic touch.

Ingredients

Wraps

  • Rice paper wraps – 10 sheets

Vegetables

  • Carrot – 1 medium, julienned
  • Cucumber – 1 medium, julienned
  • Red bell pepper – 1 medium, julienned
  • Avocado – 1 medium, sliced
  • Fresh cilantro – 1/2 cup
  • Lettuce leaves – 1 cup, shredded

Dipping Sauce

  • Soy sauce – 2 tablespoons
  • Sesame oil – 1 teaspoon

Instructions

  1. Prepare Vegetables: Wash all vegetables thoroughly. Julienne the carrot, cucumber, and red bell pepper into thin, even strips. Slice the avocado and shred the lettuce leaves. Chop the fresh cilantro.
  2. Soften the Rice Paper: Fill a large shallow dish with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes soft and pliable. Lay the softened wrap flat on a clean, dry surface.
  3. Add Fillings: Place a small handful of each vegetable – carrot, cucumber, red bell pepper, avocado slices, shredded lettuce, and fresh cilantro – in the center of the rice paper. Avoid overfilling to make rolling easier.
  4. Roll the Spring Roll: Fold the sides of the rice paper over the filling, then carefully roll it from the bottom up, keeping the roll tight to secure the ingredients inside. Repeat this process with all remaining wraps and fillings.
  5. Prepare Dipping Sauce and Serve: In a small bowl, mix soy sauce with sesame oil. Serve the spring rolls fresh with this dipping sauce for added flavor.

Notes

  • Use fresh, crisp vegetables for the best texture and flavor.
  • If you prefer a spicy kick, add some sliced chili or a dash of chili sauce to the dipping sauce.
  • Keep the spring rolls covered with a damp cloth while assembling to prevent the rice paper from drying out.
  • Serve immediately for the freshest taste or refrigerate up to a few hours in an airtight container.
  • You can customize the filling by adding tofu or other favorite vegetables.
