Instructions

  1. Making the Brigadeiro: Combine maple syrup and aquafaba in a medium saucepan over medium heat. Stir until both ingredients are well blended and the mixture has warmed through.
  2. Incorporate Cocoa and Milk: Gradually whisk in cocoa powder and salt, then add oat milk. Cook this mixture until it begins bubbling, about 3-4 minutes, stirring continuously to prevent sticking.
  3. Simmer to Thicken: Reduce heat to low and let the mixture simmer for 10 minutes, stirring gently to prevent burning. The mixture should thicken slightly and start to pull away from the sides of the pan.
  4. Add Potato Starch: Slowly add potato starch while whisking constantly. Continue cooking for another 5-10 minutes until the batter thickens enough to stick to the pan and form a fudgy consistency.
  5. Cool the Mixture: Transfer the thickened batter to a greased plate and allow it to cool completely until it is cool to the touch.
  6. Shape the Brigadeiros: Scoop about a tablespoon of the cooled mixture, lightly grease your hands, and roll it into 1-inch balls.
  7. Coat in Sprinkles: Roll each ball in vegan chocolate sprinkles to coat completely, then place them in candy cups.
