Instructions

  1. Prepare the Onions: Heat olive oil and butter in a large pan over medium heat. Add the sliced onions along with sugar, salt, and pepper.
  2. Caramelize the Onions: Cook the onions undisturbed for 5 minutes to start softening them, then stir occasionally for about 15 minutes until they turn golden brown. Add balsamic vinegar and thyme, cooking for an additional 5 minutes to develop rich flavors.
  3. Prepare Puff Pastry: Roll out the puff pastry on a floured surface and cut it into rectangles of your desired size. Place them in the refrigerator for 10 minutes to firm up.
  4. Assemble the Tarts: Evenly spread the cooled caramelized onions over each puff pastry rectangle. Crumble goat cheese on top and sprinkle with extra thyme.
  5. Bake: Place the assembled tarts on a baking sheet and bake in a preheated 400°F (204°C) oven for approximately 15 minutes, checking every 2 minutes to ensure the pastry is golden and crisp.
