Ingredients
Scale
Main Ingredients
- 2 cups quick-cooking oats
- 1 teaspoon baking powder
- 1 egg
- 3/4 cup nut butter (almond, peanut, or cashew)
- 3/4 cup pure maple syrup or honey
- 1 teaspoon vanilla extract
- 3/4 cup dark or semi-sweet chocolate chips
- Flaky salt for topping (optional)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper to prevent sticking and ensure easy removal of the bars.
- Combine dry ingredients: In a large bowl, mix together the quick-cooking oats and baking powder thoroughly to ensure even distribution of the leavening agent.
- Mix wet ingredients: In a separate bowl, whisk the egg until smooth. Then add the nut butter, pure maple syrup or honey, and vanilla extract, stirring until fully incorporated into a uniform mixture.
- Combine wet and dry: Pour the wet ingredients into the bowl with the oat mixture. Stir gently but thoroughly until the mixture is well combined. Then fold in half (1/2 cup) of the chocolate chips carefully to distribute them throughout the batter.
- Prepare for baking: Transfer the batter evenly into the prepared baking dish, spreading it out to the edges. Sprinkle the remaining 1/4 cup of chocolate chips over the surface, pressing them gently into the top to help them adhere.
- Bake: Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the bars are golden brown on top and set in the middle. A toothpick inserted should come out mostly clean.
- Finish and cool: Remove the bars from the oven and while still warm, sprinkle with flaky salt if desired to enhance the flavor. Allow the bars to cool completely in the pan on a wire rack before cutting into 9 squares and serving.
Notes
- Use quick-cooking oats for the best texture; regular rolled oats can be substituted but will yield a chewier bar.
- Maple syrup or honey can be used interchangeably depending on your preference.
- Nut butter options like almond, peanut, or cashew provide different flavor profiles – choose your favorite.
- Flaky salt on top is optional but adds a lovely contrast to the sweetness and enhances the chocolate flavor.
- Store bars in an airtight container at room temperature for up to 5 days, or refrigerate for longer freshness.
