  1. Brown the Beef: Heat olive oil in a large pot over medium heat. Add the beef stew meat and brown on all sides to develop flavor. Once browned, remove the beef from the pot and set aside.
  2. Sauté Vegetables: In the same pot, add diced onion, minced garlic, sliced carrots, and sliced celery. Cook over medium heat, stirring occasionally, until the vegetables soften and become fragrant.
  3. Add Tomato Paste: Stir in the tomato paste and cook for about one minute to deepen its flavor and coat the vegetables.
  4. Combine Ingredients: Return the browned beef to the pot and add the beef broth, pearl barley, dried thyme, dried parsley, bay leaf, salt, and black pepper. Stir everything together well.
  5. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 45 to 60 minutes. This allows the barley to cook until tender and the beef to become fully cooked and flavorful.
  6. Add Mushrooms: If using mushrooms, add them to the pot during the last 15 minutes of simmering to soften but retain their texture.
