Description

These high protein egg bites are a quick and nutritious breakfast or snack option, packed with eggs, cottage cheese, fresh spinach, and colorful bell peppers. Baked to perfection, they are creamy, flavorful, and easy to prepare, making them ideal for meal prep or a healthy bite on the go.

Ingredients

Scale

Egg Mixture

  • 6 large eggs: A rich source of protein and essential nutrients.
  • 1 cup cottage cheese: Adds creaminess and boosts protein content.
  • 1 cup fresh spinach, chopped: Sneaks in greens, adding vitamins and minerals.
  • 1/2 cup bell peppers, diced: Adds sweet crunch and vibrant color.
  • 1/2 cup cheddar cheese, shredded: Provides a delicious cheesy flavor.
  • 1/2 teaspoon salt: Enhances flavors of all ingredients.
  • 1/4 teaspoon black pepper: Adds a little spice for flavor.

For Greasing

  • Cooking spray or olive oil: For greasing the molds.

Instructions

  1. Prepare Ingredients: Gather all your ingredients and ensure the spinach is chopped and bell peppers are diced for easy incorporation.
  2. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s hot and ready for baking the egg bites evenly.
  3. Whisk Eggs: In a large mixing bowl, whisk the 6 large eggs thoroughly until they are well combined with a uniform texture.
  4. Combine Ingredients: Mix in the cottage cheese gently, then fold in the chopped spinach, diced bell peppers, shredded cheddar cheese, salt, and black pepper, making sure everything is evenly distributed.
  5. Grease Molds: Lightly grease your muffin tins or silicone molds using cooking spray or olive oil to prevent sticking.
  6. Fill Molds: Pour the egg mixture into the greased molds, filling each about three-quarters full to allow room for expansion during baking.
  7. Bake: Place the molds in the preheated oven and bake for 18-20 minutes, until the egg bites are set and lightly golden on top.
  8. Cool & Serve: Remove from oven and let the egg bites cool for a few minutes before gently releasing them from the molds. Serve warm or at room temperature.

Notes

  • For a dairy-free option, substitute cottage cheese and cheddar with plant-based alternatives.
  • You can add cooked bacon or sausage pieces to increase protein and flavor.
  • These egg bites can be stored in an airtight container in the fridge for up to 4 days.
  • Reheat gently in the microwave or oven before serving.
  • Feel free to swap bell peppers with any favorite vegetable, such as mushrooms or tomatoes.
