Description

  • 3 cloves garlic
  • 1 1/2 tablespoons honey

  • 1/4 teaspoon freshly ground black pepper
  • 1/2 small lemon
  • Chopped fresh parsley leaves, for garnish (optional)


Instructions

  1. Preheat Oven: Arrange a rack in the middle of the oven and heat it to 425°F (220°C) to prepare for roasting the carrots.
  2. Prepare Carrots: Peel and trim the carrots, then cut them into pieces as desired. Place the prepared carrots on a baking sheet lined for roasting.
  3. Make Honey Glaze: Melt the unsalted butter in a small pan or microwave, add the garlic and honey, and whisk together until well combined to create a flavorful glaze.
  4. Coat Carrots: Drizzle half of the honey glaze over the carrots on the baking sheet. Season with kosher salt and freshly ground black pepper, then toss thoroughly to ensure all pieces are coated evenly.
  5. Roast Carrots: Place the baking sheet in the preheated oven and roast the carrots for 15 minutes. Remove from the oven, toss the carrots to promote even cooking, then roast for an additional 15 to 20 minutes until the carrots are tender and caramelized.
