Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to get it ready for roasting the potatoes.
- Prepare the Potatoes: Wash and dry the baby potatoes thoroughly. In a mixing bowl, toss them with olive oil, salt, black pepper, and garlic powder until evenly coated.
- Roast Potatoes: Arrange the seasoned potatoes on a baking sheet in a single layer. Roast for 20 to 25 minutes, or until the potatoes are fork-tender and cooked through.
- Flatten Potatoes: Remove the baking sheet from the oven. Using the bottom of a glass, gently press each potato to slightly flatten it, creating a little surface area for toppings.
- Add Butter and Cheese: Place a small amount of butter on each flattened potato, then sprinkle shredded cheddar cheese and crumbled turkey bacon over the top.
- Melt Cheese: Return the baking sheet to the oven and bake for an additional 5 to 7 minutes until the cheese is melted and bubbly.
- Finish and Serve: Remove from oven, and top each bite with a dollop of sour cream and a sprinkle of chopped green onions before serving warm.
