Description

Delight in these classic Lunch Lady Brownies featuring a rich, fudgy base topped with a smooth, creamy chocolate frosting. Perfect for school lunches, parties, or an indulgent treat, these brownies are balanced with a tender crumb and a luscious chocolate glaze that sets as it cools.

Ingredients

Scale

Brownies

  • 1 cup salted butter (melted)
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract

Chocolate Frosting

  • 1/4 cup salted butter (softened)
  • 1/4 cup 2% milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 1 cup salted butter (melted)

Instructions

  1. Prepare Baking Pan: Preheat your oven to 350° F (175° C). Line a 9×13-inch baking dish with parchment paper and spray the paper with non-stick spray to prevent sticking. Set the pan aside.
  2. Mix Brownie Batter: In the bowl of an electric stand mixer fitted with the paddle attachment, combine the melted butter and cocoa powder. Blend until smooth and fully incorporated.
  3. Add Dry Ingredients and Eggs: Add the all-purpose flour and granulated sugar to the mixture and beat together gently. Then add the eggs one at a time along with the vanilla extract. Mix just until combined to avoid over mixing, as the batter will be thick and fudgy.
  4. Pour Batter and Bake: Pour the brownie batter into the prepared baking dish, spreading it out evenly. Place in the oven and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
  5. Cool Before Frosting: Remove the brownies from the oven and allow them to stand for 15 minutes. It’s important to frost while still warm for the frosting to spread and set nicely.
  6. Make Chocolate Frosting: In a mixing bowl, beat together the softened butter, 2% milk, cocoa powder, powdered sugar, and melted butter until the frosting is smooth and creamy with no lumps.
  7. Frost the Brownies: Pour and spread the chocolate frosting evenly over the warm brownies. Let the brownies cool completely at room temperature so the frosting can firm up before cutting into squares and serving.

Notes

  • Do not overmix the batter to keep the brownies tender and fudgy.
  • Frost the brownies while they are still warm for the best spreading consistency.
  • Use parchment paper and non-stick spray to ensure the brownies release easily from the pan.
  • Allow the frosted brownies to cool completely before slicing to avoid messy cuts.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
