  • 2-3 tbsp sugar or honey (to taste)

Berry Chia Jam

  • 1 cup mixed berries (blueberries, strawberries, jamun)
  • 1 tbsp chia seeds (soaked in 1/2 cup water for 30 minutes)
  • 1-2 tbsp honey (to taste)

Crunchy Base and Toppings

  • 1 cup crushed graham crackers or digestive biscuits
  • 2 tbsp melted butter
  • 1/4 cup coarsely crushed almonds, cashews, pistachios
  • 2 tbsp pumpkin seeds
  • 2 tbsp sunflower seeds

Final Assembly

  • 1 cup whipped Greek yogurt or thick plain yogurt
  • 1/2 cup diced fresh mango (for garnish)
  • 1 tsp black sesame seeds (for garnish)


Instructions

  1. Prepare mango cream layer: Blend mangoes, chenna, cream cheese (if using), milk, sugar or honey, and a pinch of salt into a smooth, thick creamy mixture. Chill the mixture until ready to use to enhance flavor and texture.
  2. Make berry chia jam: In a bowl, mash the mixed berries and jamun until pulpy. Stir in the pre-soaked chia seeds and honey. Chill for 30 minutes or until the mixture thickens into a jam-like consistency.
  3. Create crunchy base: Mix crushed graham crackers or digestive biscuits with melted butter until crumbly and combined. This will form the base layer in the parfait glasses.
  4. Assemble parfait layers: In serving glasses, start by adding a layer of the crushed cookie mixture at the bottom.
  5. Add berry chia jam layer: Spoon and spread the berry chia jam evenly over the cookie base layer.
  6. Sprinkle nuts and seeds: Sprinkle the coarsely crushed almonds, cashews, pistachios, pumpkin seeds, and sunflower seeds evenly over the berry layer for crunch and texture.
