Ingredients
Scale
For the Chicken
- 1 lb chicken breasts (about 2 large breasts)
- 1/2 cup Greek dressing
For the Rice
- 2 bags Success Boil-in-Bag White Rice, or 2 heaping cups cooked white rice
For the Toppings
- 1 (15.5 oz) can chickpeas, drained and rinsed
- 1 large cucumber, chopped
- 1 cup quartered grape tomatoes
- 1/4 cup sliced red onion
- 1/2 cup crumbled feta cheese
- 1/4 cup tzatziki
- 1/4 cup hummus
Instructions
- Marinate the chicken: Place the chicken breasts in a bowl and pour the Greek dressing over them. Thoroughly coat both sides of the chicken, then cover and refrigerate for at least 1 hour to allow the flavors to infuse.
- Prepare the rice: Cook the Success Boil-in-Bag White Rice following the package instructions until fluffy and tender, then set aside.
- Cook the chicken: Preheat your air fryer to 400°F (204°C). Air fry the marinated chicken breasts for 12-15 minutes until fully cooked and juices run clear. Alternatively, preheat your oven to 400°F (204°C) and bake the chicken for about 20 minutes or until cooked through.
- Assemble the bowls: Divide the cooked rice into four bowls. Top each serving with the cooked chicken, chickpeas, chopped cucumber, grape tomatoes, sliced red onion, a dollop of hummus, tzatziki, and sprinkle with crumbled feta cheese. Add extra Greek dressing if desired for more flavor.
- Serve and enjoy: Serve the Mediterranean chicken and rice bowls fresh for a satisfying and nutritious meal.
Notes
- For a vegetarian version, substitute chicken with grilled tofu or roasted vegetables.
- To save time, marinate chicken overnight for deeper flavor.
- Use brown rice or quinoa instead of white rice for a healthier grain alternative.
- Adjust toppings based on personal preference, such as adding olives or fresh herbs like parsley or mint.
- If air fryer is unavailable, baking the chicken is an effective alternative cooking method.
