Description

These Mini Taco Boats are a fun and easy appetizer perfect for parties or snack time. Ground beef seasoned with taco spices is stuffed into mini tortilla shells, topped with melted cheddar cheese, and finished with fresh toppings like lettuce, tomatoes, sour cream, salsa, and cilantro. Ready in just 25 minutes, they deliver all the flavors of tacos in a convenient bite-sized form.

Ingredients

Scale

Meat and Seasoning

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2/3 cup water

Shells and Cheese

  • 12 mini tortilla boats or scoop-style tortilla chips
  • 1 cup shredded cheddar cheese

Toppings

  • 1/2 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup sour cream
  • 1/4 cup salsa
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Cook Ground Beef: Heat a large skillet over medium heat. Add the ground beef and cook until browned and fully cooked, breaking it apart as it cooks. Drain any excess grease from the skillet.
  2. Season Meat: Stir in the taco seasoning packet and 2/3 cup water. Mix well and let the mixture simmer for about 5 minutes until the sauce thickens and flavors combine.
  3. Prepare Oven and Tortilla Boats: Preheat your oven to 350°F (175°C). Arrange the mini tortilla boats on a baking sheet in a single layer, ready for filling.
  4. Fill and Top: Spoon the seasoned taco meat evenly into each tortilla boat. Then sprinkle shredded cheddar cheese over the top of each filled shell.
  5. Bake: Place the baking sheet in the oven and bake for 5 to 7 minutes, or until the cheese is fully melted and bubbly.
  6. Add Fresh Toppings: Remove the taco boats from the oven. Top each with shredded lettuce, diced tomatoes, a dollop of sour cream, salsa, and chopped fresh cilantro.
  7. Serve: Serve the mini taco boats immediately while warm for the best taste and texture.

Notes

  • For a lighter option, substitute ground beef with ground turkey or chicken.
  • Try adding jalapeños, guacamole, or black olives for an extra burst of flavor.
  • If you need them gluten-free, be sure to use certified gluten-free mini tortilla boats or chips.
