Description

Monterey Chicken is a delicious and easy-to-make American main course featuring boneless skinless chicken breasts seasoned with a blend of spices, seared to perfection, then baked with barbecue sauce, crispy bacon, and a generous topping of Monterey Jack and cheddar cheeses. Garnished with fresh green onions and parsley, this dish offers a savory, cheesy, and smoky flavor profile that pairs perfectly with mashed potatoes, roasted vegetables, or rice.

Ingredients

Scale

Chicken and Seasonings

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Toppings

  • 1 cup barbecue sauce
  • 8 slices cooked bacon
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese

Garnish

  • 2 green onions, sliced
  • Chopped fresh parsley, optional

Instructions

  1. Preheat and Prepare: Preheat the oven to 400°F (204°C). Lightly grease a baking dish and set aside.
  2. Season the Chicken: Pat the chicken breasts dry. Brush both sides with olive oil, then season evenly on both sides with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Sear the Chicken: Heat a large skillet over medium-high heat. Sear the chicken breasts for 3 to 4 minutes on each side until they are lightly browned but not fully cooked through.
  4. Transfer to Baking Dish: Place the seared chicken breasts into the prepared baking dish.
  5. Add Sauce and Toppings: Spoon barbecue sauce evenly over each chicken breast. Layer each piece with 2 slices of cooked bacon, then top with Monterey Jack cheese and cheddar cheese.
  6. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted, bubbly, and golden.
  7. Garnish and Serve: Remove from the oven and garnish with sliced green onions and chopped fresh parsley, if desired. Serve immediately with your choice of sides.

Notes

  • Serve with mashed potatoes, roasted vegetables, or rice for a complete meal.
  • Use your favorite barbecue sauce to personalize the flavor profile.
  • Chicken thighs can be used instead of chicken breasts for a juicier option.
