Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper to prevent sticking and allow easy removal.
- Mix Dry Ingredients: In a medium bowl, combine the rolled oats, flour, baking soda, cinnamon, and salt. Stir well to evenly distribute all the powdery ingredients.
- Cream Butter and Sugars: In a separate large bowl, cream together the softened butter, brown sugar, and granulated sugar using a mixer or whisk. Continue until the mixture is light, fluffy, and smooth.
- Add Egg and Vanilla: Beat in the egg and vanilla extract into the creamed butter and sugar mixture until fully combined and smooth.
- Combine Mixtures: Gradually stir the dry oat and flour mixture into the wet ingredients until just combined. Gently fold in the raisins evenly throughout the dough.
- Spread Dough in Pan: Transfer the cookie dough into the prepared baking pan and spread it out evenly, smoothing the top.
- Bake: Place the pan in the preheated oven and bake for 18 to 22 minutes. Bake until the bars are golden brown on top and a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the cookie bars to cool completely in the pan on a wire rack. Once cooled, cut into 16 squares and serve.

- For chewier bars, slightly underbake by a minute or two.
