Ingredients
Scale
Orzo and Broth
- 1 cup orzo pasta
- 2 cups vegetable broth
Vegetables and Aromatics
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1/2 cup onion, diced
- 2 cloves garlic, minced
Seasoning and Oil
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil: In a large pot over medium heat, warm the olive oil to prepare for sautéing the aromatics.
- Sauté onions and garlic: Add the diced onions and minced garlic to the pot, cooking until they turn translucent and aromatic, about 3-4 minutes.
- Cook cherry tomatoes: Stir in the halved cherry tomatoes and cook for 2-3 minutes until they soften slightly and release their juices.
- Add orzo and broth: Incorporate the orzo pasta, vegetable broth, dried oregano, salt, and pepper. Stir to combine all ingredients evenly.
- Simmer: Bring the mixture to a boil, then lower the heat and let it simmer for 10 minutes, or until the orzo is tender and has absorbed much of the broth.
- Add spinach: Stir in the chopped spinach and cook for an additional 1-2 minutes until the spinach wilts and blends into the dish.
- Serve hot: Remove from heat and serve the orzo warm for a delicious, comforting meal.
Notes
- You can substitute vegetable broth with chicken broth if not vegetarian.
- Feel free to add Parmesan cheese or fresh herbs like basil for extra flavor.
- To make it a complete meal, add cooked chicken, shrimp, or beans for protein.
- Cook time may vary slightly depending on the brand of orzo pasta.
