Potluck Cornbread Salad is a bold Southern side dish that layers crumbled cornbread with fresh vegetables, beans, cheese, bacon, and a creamy ranch dressing. - 1 pan prepared cornbread, cooled and crumbled
Dressing
- 1 cup ranch dressing
- 1 cup mayonnaise
- 1 packet ranch seasoning mix
Vegetables & Beans
- 2 cups cherry tomatoes, halved
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 cup corn kernels, fresh or frozen and thawed
- 1 can black beans, drained and rinsed
Other Ingredients
- 1 cup shredded cheddar cheese
- 8 slices cooked bacon, crumbled
- 1/2 cup sliced green onions
- 1/4 cup chopped fresh parsley
Instructions
- Prepare Cornbread: Bake or prepare cornbread according to your favorite recipe or package directions. Allow it to cool completely, then crumble it into bite-sized pieces for layering.
- Make Dressing: In a medium bowl, whisk together the ranch dressing, mayonnaise, and ranch seasoning mix until smooth and well combined.
- Layer Salad: In a large trifle bowl or glass serving dish, start by layering half of the crumbled cornbread evenly on the bottom. Then layer half of the cherry tomatoes, green and red bell peppers, corn kernels, black beans, shredded cheddar cheese, crumbled bacon, and sliced green onions on top.
- Add Dressing: Spread half of the dressing mixture evenly over the layered ingredients to provide creamy flavor infusion.
- Repeat Layers: Repeat the layering process with the remaining cornbread, vegetables, beans, cheese, bacon, green onions, and finish with the remaining dressing spread evenly on top.
- Garnish and Chill: Sprinkle the chopped fresh parsley over the top as a garnish. Cover and refrigerate the salad for at least 1 hour to allow all the flavors to blend and the salad to chill.
