Main Ingredients
- 12–15 frozen potstickers (store-bought or homemade)
- 4 cups chicken broth (or vegetable broth for vegetarian option)
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons grated ginger
- 2 cloves garlic, minced
Vegetables & Garnish
- 2–3 green onions, chopped (for garnish)
- 1/2 cup sliced mushrooms (optional)
- 1/2 cup spinach or bok choy (optional)
Seasonings & Extras
- 1 tablespoon rice vinegar (optional)
- Salt and pepper to taste
- 1 teaspoon chili oil or red pepper flakes (optional)
Instructions
- Prepare the broth. In a large pot, heat the sesame oil over medium heat. Add the grated ginger and minced garlic, sautéing for about 1 minute until fragrant but not browned.
- Add liquid ingredients. Pour in the chicken or vegetable broth along with the soy sauce and rice vinegar if using. Stir to combine and bring the broth to a gentle simmer.
- Add vegetables. If using mushrooms and spinach or bok choy, add them to the pot once the broth is simmering. Allow them to cook for about 3-4 minutes until tender.
- Cook the potstickers. Gently add the frozen potstickers to the simmering broth. Let them cook for 6-8 minutes, or according to package instructions, until the potstickers are heated through and the wrappers are tender.
- Season the soup. Taste the broth and add salt, pepper, and chili oil or red pepper flakes if desired for a spicy kick. Adjust seasoning to your liking.
- Garnish and serve. Ladle the soup with potstickers into bowls and sprinkle chopped green onions over the top. Serve hot and enjoy the comforting flavors.
Notes
- Using vegetable broth instead of chicken broth makes this soup vegetarian-friendly.
- You can customize the soup with your favorite vegetables like baby corn, snap peas, or carrots.
- For a gluten-free option, ensure the potstickers and soy sauce are gluten-free.
- The chili oil or red pepper flakes add heat but are optional to keep the soup mild.
- This soup can be prepared in about 25 minutes, making it perfect for a quick weeknight meal.
