  • 1 cup (about 240 g) pumpkin puree
  • 1/2 cup (about 170 g) honey
  • 1/2 cup (about 128 g) almond butter


Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking dish with parchment paper to ensure easy removal and prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin spice, chopped nuts, dried cranberries, and salt. Stir until all the dry components are evenly distributed.
  3. Combine Wet Ingredients: In a separate bowl, blend the pumpkin puree, honey, and almond butter together until the mixture is smooth and homogenous, ensuring the almond butter is well incorporated.
  4. Mix Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients bowl and mix thoroughly until all oats and nuts are evenly coated and the mixture is well combined.
  5. Transfer to Baking Dish: Spoon the granola mixture into the prepared baking dish and press it down firmly and evenly to set the bars.
