Scale
Dry Ingredients
- 2 cups (about 180 g) rolled oats
- 2 teaspoons pumpkin spice
- 1/2 cup (about 60 g) chopped nuts
- 1/2 cup (about 70 g) dried cranberries
- 1/4 teaspoon salt (optional)
Wet Ingredients
- 1 cup (about 240 g) pumpkin puree
- 1/2 cup (about 170 g) honey
- 1/2 cup (about 128 g) almond butter
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch (20×20 cm) baking dish with parchment paper to ensure easy removal and prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, pumpkin spice, chopped nuts, dried cranberries, and salt. Stir until all the dry components are evenly distributed.
- Combine Wet Ingredients: In a separate bowl, blend the pumpkin puree, honey, and almond butter together until the mixture is smooth and homogenous, ensuring the almond butter is well incorporated.
- Mix Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients bowl and mix thoroughly until all oats and nuts are evenly coated and the mixture is well combined.
- Transfer to Baking Dish: Spoon the granola mixture into the prepared baking dish and press it down firmly and evenly to set the bars.
- Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the edges turn golden brown and the bars are set.
- Cool and Slice: Allow the granola bars to cool for 10 minutes in the baking dish. Then carefully lift the parchment paper to remove the bars and let them cool completely on a wire rack before cutting into 12 bars.
