Description
A vibrant and flavorful ravioli dish featuring tender asparagus, juicy cherry tomatoes, and aromatic garlic and herbs, all sautéed to perfection and tossed with fresh ravioli for a quick and satisfying meal.
Ingredients
Scale
Ravioli
- 1 package fresh ravioli (cheese or your choice of filling)
Vegetables & Herbs
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 pint cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 tablespoon fresh basil, chopped
- 1 tablespoon fresh parsley, chopped
Seasonings & Extras
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/4 teaspoon crushed red pepper flakes (optional)
- Freshly grated Parmesan cheese (optional, for serving)
Instructions
- Cook the Ravioli: Bring a large pot of salted water to a boil. Add the fresh ravioli and cook according to the package instructions, usually 3-5 minutes until tender. Drain the ravioli, reserving a small amount of the pasta water to use later.
- Sauté Garlic: While the ravioli cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
- Cook Asparagus: Add the trimmed and cut asparagus pieces to the skillet. Sauté for 3-4 minutes until they are tender but still crisp, stirring occasionally.
- Add Tomatoes: Add the halved cherry tomatoes to the skillet and cook for another 2-3 minutes until they start to soften.
- Season Vegetables: Season the vegetables with salt, pepper, and crushed red pepper flakes if using. Stir well to combine the flavors.
- Combine Ravioli and Vegetables: Add the cooked ravioli to the skillet with the sautéed vegetables. Gently toss everything together to combine. If the mixture seems dry, add a splash of the reserved pasta water to create a light sauce.
- Add Fresh Herbs: Stir in the chopped fresh basil and parsley to the skillet, mixing gently.
- Serve: Plate the ravioli with vegetables and sprinkle with freshly grated Parmesan cheese if desired. Serve immediately for best flavor and texture.
Notes
- Use fresh ravioli for best texture and taste; frozen can also work but adjust cooking time accordingly.
- If you prefer less heat, omit the crushed red pepper flakes.
- Adding a splash of pasta water helps to create a light, flavorful sauce that clings to the ravioli.
- Fresh herbs can be substituted with dried herbs, but use about one-third the quantity.
- This dish pairs well with a crisp white wine or sparkling water with lemon.
