  • 2 pounds russet potatoes, peeled and cubed

  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the assembled shepherd’s pie.
  2. Cook Potatoes: Boil the peeled and cubed russet potatoes in salted water for 15 to 20 minutes, or until they become fork tender. Drain thoroughly.
  3. Mash Potatoes: Mash the drained potatoes with butter and milk until smooth and creamy. Season with salt and black pepper to taste, then set aside.
  4. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add diced onion, carrots, and celery and cook for about 5 minutes until softened and fragrant.
  5. Add Garlic and Meat: Stir in minced garlic and cook for 1 minute. Add the ground lamb or beef and cook until browned, breaking up the meat as it cooks.
  6. Flavor the Meat Mixture: Mix in tomato paste, Worcestershire sauce, thyme, and chopped rosemary. Pour in the beef broth and simmer the mixture for 10 minutes until it thickens slightly.
  7. Add Peas and Season: Stir in the frozen peas and season with salt and black pepper according to your taste preferences.
