Ingredients
Scale
Shrimp and Rice
- 1 cup cooked shrimp, peeled and deveined
- 2 cups jasmine rice, cooked and cooled (preferably day-old)
Vegetables and Aromatics
- 1/2 cup peas (fresh or frozen)
- 1/2 cup carrots, diced
- 3 green onions, sliced (white and green parts separated)
- 3 cloves garlic, minced
Sauces and Oils
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons vegetable oil (for cooking)
Additional Ingredients
- 2 eggs, beaten
- Salt and pepper, to taste
Instructions
- Prepare Ingredients: Ensure the shrimp is already cooked, the jasmine rice is cooled (ideally day-old for the best texture), and the vegetables are diced and sliced as specified.
- Heat Cooking Oil: Place a large skillet or wok over medium-high heat and add the vegetable oil, allowing it to warm up for stir-frying.
- Cook Shrimp: Add the cooked shrimp to the hot pan and stir-fry for about 2 minutes until heated through, then remove and set aside to prevent overcooking.
- Cook Vegetables and Aromatics: In the same pan, add diced carrots and stir-fry for 2 to 3 minutes until slightly softened. Then add the minced garlic and the white parts of the green onions, cooking for an additional minute to release their flavors.
- Scramble Eggs: Push the shrimp and vegetables to one side of the pan. Pour the beaten eggs into the cleared area and scramble until the eggs are fully cooked and slightly set.
- Add Rice: Add the cooled jasmine rice into the pan, breaking up any clumps. Stir everything together thoroughly to combine the eggs, vegetables, and rice evenly.
- Season with Sauces: Pour the soy sauce and sesame oil over the rice mixture. Stir well to distribute the flavors evenly. Season with salt and pepper according to your taste.
- Add Peas and Green Onions: Gently fold in the peas and green parts of the green onions. Cook for an additional 1 to 2 minutes to heat the peas through and meld all ingredients.
- Serve: Remove from heat and transfer the shrimp fried rice onto a serving dish. Optionally garnish with extra green onions for added freshness and color.
Notes
- For best texture, use day-old cooked jasmine rice as it prevents clumping and sogginess.
- Adjust the amount of soy sauce to control saltiness, especially if using low-sodium soy sauce.
- Frozen peas can be used; just add them directly without thawing.
- Feel free to substitute shrimp with cooked chicken or tofu for variation.
- Make sure shrimp is cooked beforehand to avoid overcooking during stir-fry.
