  1. Prepare Ingredients: Ensure the shrimp is already cooked, the jasmine rice is cooled (ideally day-old for the best texture), and the vegetables are diced and sliced as specified.
  2. Heat Cooking Oil: Place a large skillet or wok over medium-high heat and add the vegetable oil, allowing it to warm up for stir-frying.
  3. Cook Shrimp: Add the cooked shrimp to the hot pan and stir-fry for about 2 minutes until heated through, then remove and set aside to prevent overcooking.
  4. Cook Vegetables and Aromatics: In the same pan, add diced carrots and stir-fry for 2 to 3 minutes until slightly softened. Then add the minced garlic and the white parts of the green onions, cooking for an additional minute to release their flavors.
  5. Scramble Eggs: Push the shrimp and vegetables to one side of the pan. Pour the beaten eggs into the cleared area and scramble until the eggs are fully cooked and slightly set.
