Description

These Southwest Chicken Egg Rolls are a delicious and easy-to-make appetizer or snack that combines shredded chicken, black beans, corn, bell peppers, and cheese wrapped in crispy egg roll wrappers. Seasoned with taco seasoning and fried to golden perfection, these egg rolls offer a flavorful twist with a Tex-Mex flair perfect for parties or casual gatherings.

Ingredients

Scale

Filling

  • 2 cups cooked chicken, shredded
  • 1 cup black beans, drained
  • 1 cup corn, drained
  • 1 cup bell peppers, diced
  • 1/2 cup green onions, sliced
  • 1 tablespoon taco seasoning
  • 1/2 cup shredded cheese (cheddar or Mexican blend)

Wrapper and Cooking

  • 10 egg roll wrappers
  • Oil for frying (about 2 cups vegetable or canola oil)

Instructions

  1. Prepare the Filling: In a large bowl, thoroughly mix the shredded chicken, drained black beans, corn, diced bell peppers, sliced green onions, taco seasoning, and shredded cheese to combine all the flavors evenly.
  2. Assemble the Egg Rolls: Lay an egg roll wrapper flat on a clean surface. Place a spoonful of the filling mixture in the center of the wrapper. Fold in the sides tightly over the filling and roll the wrapper to enclose the mixture completely, sealing the edges to prevent filling from escaping.
  3. Heat the Oil: Pour enough oil into a frying pan to cover the bottom in about 1 inch of depth. Heat the oil over medium heat until it reaches about 350°F (175°C), or when it sizzles slightly if you drop a small piece of wrapper in.
  4. Fry the Egg Rolls: Carefully place the assembled egg rolls in the hot oil, a few at a time without overcrowding. Fry them for approximately 3-4 minutes each, turning periodically to ensure they become evenly golden brown and crispy on all sides.
  5. Drain and Serve: Once browned, remove the egg rolls from the oil with a slotted spoon and place them on paper towels to drain excess oil. Serve them hot for the best flavor and texture.

Notes

  • Ensure the oil is hot enough before frying to prevent soggy egg rolls and excessive oil absorption.
  • Seal the egg roll wrappers tightly to avoid filling leakage during frying.
  • Use a mix of cheeses like cheddar and Monterey Jack for additional flavor.
  • These egg rolls can be baked as a healthier alternative: Bake at 425°F (220°C) for 15-20 minutes, turning halfway.
  • Serve with salsa, sour cream, or guacamole for dipping.
