Description

Spicy Potato Noodles is a vibrant and flavorful Asian-inspired vegetarian main course featuring chewy potato starch noodles tossed in a spicy, garlicky sauce with fresh vegetables like bok choy and carrots. This easy-to-make skillet dish combines the heat of chili crisp and chili garlic sauce with the savoriness of soy sauces, balanced by a hint of sweetness and acidity for a perfect weeknight meal.

Ingredients

Scale

Noodles and Sauce

  • 14 ounces potato starch noodles
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon chili crisp
  • 1 tablespoon chili garlic sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red pepper flakes

Vegetables and Garnishes

  • 1 cup shredded carrots
  • 1 cup sliced bok choy
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the noodles: Boil the potato starch noodles according to package instructions until they are tender but still chewy. Drain and rinse them under cold water to stop cooking and prevent sticking.
  2. Sauté aromatics: Heat vegetable oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant and aromatic.
  3. Cook vegetables: Add the shredded carrots and sliced bok choy to the skillet. Stir-fry for 3 to 4 minutes until the vegetables soften slightly but still have some crunch.
  4. Prepare sauce: In a small bowl, whisk together the soy sauce, dark soy sauce, chili crisp, chili garlic sauce, rice vinegar, sesame oil, sugar, and crushed red pepper flakes until well combined.
  5. Toss noodles with sauce: Add the cooked noodles into the skillet with the vegetables, then pour the sauce over the top. Toss everything thoroughly to coat the noodles and vegetables evenly with the spicy sauce.
  6. Heat through and garnish: Cook the tossed noodles for an additional 2 to 3 minutes, stirring occasionally, until heated through. Remove from heat and garnish with sliced green onions and sesame seeds before serving.

Notes

  • Adjust the spice level by increasing or reducing the amount of chili garlic sauce to your preference.
  • Add extra protein like tofu, shrimp, or chicken for a more filling meal.
  • Rinsing the noodles with cold water after cooking helps prevent them from sticking together.
  • Use a wok if available for even heat distribution and quick stir-frying.
  • For a gluten-free version, ensure the soy sauces used are gluten-free.
