- 2 cups fresh spinach
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 flour tortillas
- 2 tablespoons olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Heat the skillet: Heat 1 tablespoon of olive oil in a skillet over medium heat until warm but not smoking.
- Sauté the spinach: Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes. Remove from heat.
- Prepare the filling: In a bowl, combine the sautéed spinach, shredded cheese, garlic powder, salt, and pepper and mix well.
- Assemble the quesadilla: Place one flour tortilla in the skillet over medium heat; spread half of the spinach and cheese mixture evenly over it and top with a second tortilla.
- Cook the quesadilla: Cook for 3-4 minutes on one side until golden brown and crispy, then carefully flip and cook another 3-4 minutes on the other side until the cheese is fully melted and the tortilla is crisp.
- Serve: Remove the quesadilla from the skillet, slice into wedges, and serve warm. Repeat the process for the remaining tortillas and filling.
