Description

Delicious and easy-to-make Spinach & Cheese Quesadillas that combine fresh sautéed spinach with melted cheddar or mozzarella cheese, all sandwiched between crispy golden tortillas. Ready in just 25 minutes, this recipe is perfect for a quick lunch or dinner option packed with flavor and nutrition.

Ingredients

Scale

Ingredients

  • 2 cups fresh spinach
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 flour tortillas
  • 2 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Heat the skillet: Heat 1 tablespoon of olive oil in a skillet over medium heat until warm but not smoking.
  2. Sauté the spinach: Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes. Remove from heat.
  3. Prepare the filling: In a bowl, combine the sautéed spinach, shredded cheese, garlic powder, salt, and pepper and mix well.
  4. Assemble the quesadilla: Place one flour tortilla in the skillet over medium heat; spread half of the spinach and cheese mixture evenly over it and top with a second tortilla.
  5. Cook the quesadilla: Cook for 3-4 minutes on one side until golden brown and crispy, then carefully flip and cook another 3-4 minutes on the other side until the cheese is fully melted and the tortilla is crisp.
  6. Serve: Remove the quesadilla from the skillet, slice into wedges, and serve warm. Repeat the process for the remaining tortillas and filling.

Notes

  • Use a non-stick skillet or a well-seasoned cast iron pan for best results.
  • Feel free to substitute spinach with kale or swiss chard for a different flavor.
  • Adjust salt and pepper according to your taste preference.
  • For extra protein, add cooked chicken or beans to the filling.
  • Serve with salsa, sour cream, or guacamole for added flavor.
