For the Filling:

Instructions
- Preheat the oven: Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper to prepare for baking.
- Sauté spinach and garlic: Heat olive oil in a pan over medium heat, then add minced garlic and sauté for 30 seconds until fragrant. Add baby spinach and cook until wilted, then remove from heat.
- Mix the filling: In a mixing bowl, combine ricotta cheese, parmesan, cheddar, the egg, chopped shallots or green onions, salt, and pepper. Stir in the sautéed spinach and garlic mixture until well blended.
- Prepare the puff pastry: Roll out the puff pastry sheet and cut it into rectangles suitable for rolling.
- Fill and roll: Place a spoonful of the spinach and cheese filling along one edge of each rectangle. Roll the pastry tightly to enclose the filling completely.
